Morning Glory Muffin

Ingredients

Dry Ingredients 2 cups flour 2 cups bran 2 tbsp sugar 1/4 tsp salt 1 1/4 tsp baking soda 1 large shredded carrot 1/2 cup walnuts 1/2 cup raisins (I use golden raisins) Wet Ingredients 1 cup milk 1 cup yogurt or instead of milk/yogurt use buttermilk
1 egg beaten
1/2 cup molasses
2 to 4 tbsp canola oil

Instructions

Pre-heat oven to 350
Mix dry ingredients
Mix wet ingredients
Pour wet ingredients into dry ingredients and fold till mixed
Pam spray two muffin tins and scoop in mix
Bake 25 minutes
Wonderful with cheddar cheese!

Kettle Corn

Ingredients

1/4 cup oil 1/2 cup popcorn 1/4 cup sugar 1/8 teaspoon salt

Instructions

add oit to a pan and 3 kernels of popcorn. heat over med-high heat. When you hear the 3 kernals pop, remove pan from the heat and add corn, salt and sugar. Stir for a few seconds and cover and count to 30 and put pan on heat.
Shake popcorn and cook till down to 1 or 2 pops per second. Remove from heat and pan (so it won’t burn) and enjoy.2.6wk_bootstrap();

Spicy Hummus

Ingredients

1 (14.5 ounce) can chickpeas (garbanzo beans), drained 2 rounded tablespoons tahini sesame paste, found in both dairy and dry specialty foods sections A drizzle extra-virgin olive oil 1/2 teaspoon crushed pepper flakes 1 teaspoon (1/3 palm full) ground cumin 1 teaspoon (1/3 palm full) ground coriander
1 clove garlic, crushed
Coarse salt
1/2 lemon, juiced
Pita breads, grilled and cut into wedges for dipping

Instructions

Combine beans, tahini, oil, pepper flakes, cumin, coriander, garlic, salt, and lemon juice in food processor bowl and grind into a smooth paste.
Transfer to a small dip dish and surround spread with warm pita wedges.
